...open and happening all year round is very important. I am a people person, we are both very sociable love restaurants and bars(away from the tourist areas)  we are definitely looking to rent.

At present, I believe, you need an income of around €32,000 per annum for a couple. You will need to prove that you have full healthcare paid for a full year. 

If you want to apply for residency you need to put in the application to the Spanish embassy while you are still in the UK. They will advise you if you will need to apply for any visas.
