Can I drive in Spain with my UK drivers licence ?

yes with all the legal requirements
If you have Spanish residency you are only allow to use your UK licence up to 30 April 2022.

And then, unless there is an agreement, you will need to take a Spanish driving test.

I thought the (ad nauseum) extensions were only for those who registered for an exchange before Dec 31st. 2020?

"If you moved to Spain after 1 January 2021, your valid UK licence will be recognised for 6 months from the date you obtained residence, or until 30 April 2022, whichever is later."

It may help the poster to have a look at the N332 website which covers anything to do with driving in Spain for English speaking people.
