Can I apply for these in the UK, or would it be easier to wait till I'm in Spain(Alicante or Benidorm itself), as I will need to book a holiday first I assume or if any body knows of anybody who's renting a room?

You can apply for an NIE through your nearest Spanish consulate. Otherwise you'd have to get an appointment out here and do it when you're in Spain.
