Recommendations for a pool regrout

Can anyone recommend a company/people that regrout a swimming pool to a high standard & preferably put the water back.

Talk to John Cox. I'd guess that his diary is already filling up with pool regrouts for next winter.

Forget about storing the water. I'm sure it would work out more expensive than a refill.If you've not changed your water for some time, it's quite possible that the cyanuric acid and total dissolved solids levels are too high, so the water will be due for changing anyway.
