It depends on what you like to do and where you are staying. Santa Pola is a lovely, busy, friendly port town. If you are on the far west (Playa Lissa, Tamarit) or east (Santa Pola Este), then for two weeks it will be a beach-style break, but it's not really warm enough for sunbathing and there's not much going on at this time of year.
However...if you are in the centre (near Plaza Glorieta - see pic) and you like wandering around the busy bit between the Castillo and the marina, there are lots of small shops, millions of bars and even in January everyone is sitting outside. I went down to the harbour area yesterday (Sunday morning at 12:00) and the whole area was packed with people of all ages outside drinking beer, coffee, lunch (see pic - 3 course Sunday lunch with 2 beers €15), reading newspapers, chatting - the atmosphere was brilliant.
Won't be there in Feb, I'm heading back to the UK for couple of weddings, back in March.
