Unfortunately Brexit has put a stop to your ability to work legally in Spain. All jobs much be offered to EU personal first.

I don’t suppose that you have Irish parents or grandparents? 

I’m just in the process of applying for an Irish passport for my wife via her dad who was born in Ireland, this makes the whole process of going to Spain easier

Well it's a bit complicated, I'm adopted, but yes my grandmother was Irish. Not by blood though .

My wife was adopted as a baby, check on the Irish passport site and if you are legally adopted then you should be able to apply to go on to the FBR Foreign Births Register because of your grandparents, it does take about 18 months but it would help you to get an Irish passport which gives you freedom to travel as an eu citizen.
