You'll definitely see them in the salt lakes at Santa Pola, either side of the N332.

It seems they have left with even the management of the natural park not noticing.. opps...

Santa Pola as  Kim says , just south of Alicante airport on the N332 there are salt lakes either side of the road, with a couple of parking spaces. The flamingos tend to move around from lake to lake, but I’ll guarantee you will see a few hundred there at any time of the year.

Yes, I don't know where the parking places are...

I hope they are marked / signed or easily visible because I would hate to miss them and not be able to stop along that road.

There are two little roads that run off and alongside the salt lakes. Coming from Alicante you will see a bull(like the one on the way into Benidorm) on the left hand side. One parking place is near there , but it’s on the wrong side of the road for you . Keep going and on a teeny bit further along the road  itbends to the left , with big black arrows telling you to keep left. Ignore those arrows and keep right and that’s where you can park up.

Thank you so much for this information; it's not easy (for me) driving whilst at the same time trying to look out for where to stop (safely) to see the flamingos and to take photos.
