Welcome to the forum.
Go on A place in the Sun website they have some excellent booklets you can download, about buying in Spain as well as living in Spain. They also will give a list of what you currently need to be able to apply for a visa. As long as you meet the criteria I certainly wouldn’t worry too much about the legal side of moving at the moment. Rules and regulations change at a moments notice, so who knows the rules will be in 8 years time when you plan to move.
Renting or buying as in the U.K. can be down to personal preference or finances. But although you’re advised to rent first to get to know the area, you have got plenty of time to have a good look around.
If it’s a permanent move, you need to look at areas and property differently. A holiday home by the beach is a dream for many, but when it’s a permanent home, do you want thousands of noisy holiday makers invading your personal space in July & August. So have a look around many different areas, but make sure you visit in the high season of July/August and the low season of Jan/Feb. Your chosen area might turn out to be too manic in summer and too quiet for you in winter.
If you are going to be reliant on public transport choose your areas carefully as some areas are just not served by buses at all.
We are all individuals, so all want different things in life. What you think is a dream home in a dream location, will be a living nightmare for others.
But finding you new home in the sun is only the beginning of an exciting journey.
