Anyone any idea where this may be bought? I have just been laughed out of Mercadona and Consum, together with no knowledge in Iceland!

I want it for an Italian cake recipe and have no intention of travelling to a little known deli in the back streets of a village in Umbria!

Failing this, any good bakers tell me if cornstarch/ground almonds/rice flour may be substituted without noticeably impinging on the result?

Are you following a kosher recipe?

If not I’d personally use  rice flour can be found in both Mercadona and Consum. I use both rice flour and ground almonds when making pastry - rice flour is by far the cheaper option.

Thank you Lynn. No its not a kosher recipe, curiously, but a very old recipe apparently from Rome. Yes, I frequently add ground almonds to cakery(!), but the quantity required in this would, I imagine, make it slightly granular and very moisture retentive.

Maybe not much help to you but my wife buys hers from the Chinese food supermarkets.

Thank you very much! Unfortunately there is a dearth of these in rural spain… We have huge household Chinese stores but have not found food supplies. Although there may be in Denia, if anyone happens to know?
