I have applied for a Spanish driving licence and have a temporary paper one. Does anyone know if I will be able to rent a car when I go back in December if the virus does not stop me from going.

I have neighbours who were in your situation. The UK car rental would not accept the interim Spanish paperwork.
Luckily, they had pics of their UK licences on their phones.

If you go on the UkGOV DVLA website they may have preserved your uk licence details, you will need your uk licence number and/or your uk N. I number. If so you can print/download details of your uk licence with your licence information and category entitlements, these may help if you also have photo copies of your original uk licence and Spanish paperwork of your exchange, also it may be worth contacting the car hire company to see if they will except such items even with other forms of i.d, such as passport and credit cards, when I renewed my uk licence to a Spanish licence I received the Spanish licence within 42 days recently. Worth a try/look, good luck stay safe and healthy my friend.
