Many thanks to those who have responded with advice on where to buy the chicken and their cooking methods.
I have always found Rio butchers by far better than anywhere else.

Where can I get these please?
Reeves butchers are in San Luis adjacent to the cv905 going into Torrevieja.

Are we talking about chicken breasts or full chickens? Aldi sell good chicken fillets but be careful when choosing as some chicken breasts have been sliced into thin escalopes and not as good as the full breast. As easy way to cook them is to put flour, salt, pepper and if you like spice, add some chilli powder or curry powder into a small freezer bag. Pop each chicken into it and shake well. Take a heavy based frying pan and heat some oil ( olive oil, sun flower, rapeseed or any of your choice). When the oil is hot, place each chicken breast onto the Ian and allow to brown on each side. Reduce your heat when fillets are browned and cook gently until you are sure that the chicken is cooked. You can pierce the middle and press to see if clear liquid comes out.
If you like your chicken moist you could add some water to the pan and put a lid over the chicken allowing the heat to steam it. When cooked, remove fillets and make a sauce to coat them. Should be delicious eaten hot or cold.

I love the big chicken breasts. What grieves me is that when waiting in the queue I see the butcher slicing them up into mico thin slices for the Spanish. To me that would ruin the flavour even if they do only take seconds to cook. Are they in that much of a hurry? I always ask for them to be 'limpio y entero', cleaned and in one piece.
As for cooking them I either microwave them for 3-4 minutes or BBQ them for up to 5 mins depending how thick they are. Just stick a skewer in to see if they are cooked.
