I’m looking at buying a second hand car privately soon . I’m from Eu and new to Spain but plan to stay for the foreseeable . Do I need any special paperwork such as Nie to process the purchase from my end ?

Buying privately will mean added risk and added cost as you would be liable for paying change of ownership. Would recommend Auto Roig, they have two sites either side of the Cabo Roig roundabout on the N332. When we first came out to Spain and were looking for a wee run around we were well looked after by James. All the legal stuff was sorted by him, change of ownership, new ITV( MOT ), service and warranty, help with getting insurance.
