Can anyone recommend: Good Paella

Hi all,
We will be over 3rd week January Villamartin area. Anyone recommend a place to sit down and enjoy an authentic paella.

There is such an "authentic" paella as there is an authentic "bangers 'n' mash". Nobody knows exactly how many varieties of paella exist. It's always a "hit and miss". Most places offer "made to order" meaning you have to wait at least 20 minutes and never come before 1 pm.

The Campoamor Golf hotel restaurant does a lovely paella and well presented etc
