Moving to Spain from the U.K. isn’t as easy as it used to be,sadly. I believe you must show as much as .€26,000 income per year and jump through many hoops. Somebody else in the know will tell you this.
Living in a caravan, have you thought this through? You’ll need to install air con as you’ll be be woken at about 5am with the intense heat during the summer. New caravans are well insulated nowadays so heating it in winter should be easy enough. I imagine you’ll live on a caravan park so will have to pay fees annually for this. I think you should contact a caravan park office and find out the costs. Possibly you’ve already done that and now you are hoping for a direct deal with an owner who wants to sell. Not sure it’s as simple as that. The site owners are usually in control and insist that you change / upgrade to a new one every 10 years or so. Good luck with your search.

To live in Spain permanently will require you to initially apply to the Spanish embassy while you are still living in the UK.
You will need to apply for residency and meet all the requirements needed. You will need to prove that you have an income of around €27,000 per annum and have full healthcare paid for a full year.
You may also need to apply for a Visa.
As Grannyrose has mentioned, living in a caravan full time can get very uncomfortable with the heat in summer and the cold in winter. The rents and other expenses can add up to more than renting a 2 bedroom apartment.
Contact the Spanish embassy in the UK for all requirements needed for income and healthcare.

I looked into this for a friend a few years ago, it turned out that the monthly/yearly site fees were on a par with mortgage repayments. In the end they bought an apartment and it worked out cheaper than the site fees.
