what passport do you hold?
Though not legal, I know of many situations where the carer is paid "under the table" as it is too expensive for normal families here to pay for the legal route to provide a carer for their elder parents/relatives.

There are several care companies in Benidorm who are always looking for staff especially to cover for holiday periods.
Whatever some posters may advise, it would be illegal to work in Spain without the correct paperwork.
However, if you have a UK passport and want to live in Spain permanently and work you will need to have a work visa.
To get a work visa you would need to secure a work position first while you are still resident in the UK. If you were lucky enough to get a work position then the prospective employer will need to apply for a work visa on your behalf from the Spanish consulate in the UK.
Please be aware that all work positions in Spain must be offered to an EU passport holder first and only if no EU citizen is suitable then they can offer you the job.

Hi there so i already have spanish residancy and NIE number as i lived there with my parents years ago and we all got residency then. So will that still be legal and help towards getting a work visa... Thank you steve

If had 'permanent' residency that will help as long as you haven't been out of the country for to long and made it void.
When did you actually leave Spain?

I think you have been out of Spain for to long. Even with a "permanent" residency the maximum period outside of Spain seems to be 6 years. Your residency card will be invalid.

You can't just move to Spain and apply for residency without some sort of visa.
If you move to Spain and stay to work illegally you could get yourself and anyone who pays you "under the table" into serious trouble. You would not be covered by any third party insurance or healthcare.
