Thinking off relocating to benidorm, Am senior care assistant for spinal/brain injury, long term ventilation, how hard would it be to get work in this field

Impossible if you only have a UK passport.

If you are a UK passport holder and want to live and work in Benidorm you will need to find and secure a position first and then your prospective employer will need to apply for a work visa from the Spanish consulate in the UK. 

All work must, by law, be offered to an EU citizen first and if they cannot find an EU citizen to fill the position then they can offer the position to a UK citizen. 

As mentioned, it's highly unlikely that you will secure a position and work visa.

 Even if you dont intend to work, you now need a Visa to live here....In that case it would be a NLV - Non Lucrative VIsa which you would need to apply for from the Spanish Embassy/Consulate in the UK.   You would have to meet several requirements to get a Visa, financial, private health insurance, criminal background check & several more.https://myspainvisa.com/non-lucrative-visa-spain/

You could live in Spain and travel to the UK to work under the withdrawal agreement which means you can be in Spain 90 days in 180, you can do live in care, the money is good and it’s very flexible. There are loads of agencies to choose from
