Unless you are a Spanish resident, then an adult cannot enter Spain unless you have been vaccinated or have an in date covid recovery certificate.

I own an apartment in Spain and have been unable to come out for 2 years is there anything I can do?

There is no justification whatever for Spain's continued discrimination against people who are unvaccinated and the list of countries that has removed all travel restrictions continues to grow. I think if you wait just a bit longer Spain will follow suit, possibly by the end of the month as even the fanatical mask wearing requirements are being lifted on the 20th.

Presuming that you are from the U.K. then the covid recovery certificate is shown on the NHS app.
It shows the date you contracted covid and is valid for 180 days after that date. After that it disappears off the app as the certificate is no longer valid.
Unfortunately although you own property in Spain, you are still just a tourist and treated no different to any other holiday maker trying to enter Spain.
The best you can hope for (if you haven’t got a covid recovery certificate), is that the rules change sometime in the future to allow unvaccinated people to enter.
I presume you’ve got someone local checking that your property is OK.
