Absolutely agree, I've always believed it's where the theft actually took place. Therefore if the deal was done in the UK, it's up to the UK police to investigate and liasr with the Spanish authorities.

Sadly we virtually have no police force, you can’t get though to anyone, when you do they will say they have no one to come out. It is a disaster here now, Dickson of Dock green would be horrified. More interested in diversity training.

You say the UK Police are not interested yet you haven't actually specified if you have in fact reported this to them.
If you have photos of their new house and car then that suggests you, or someone you know, knows where they live.
You say that you got scammed by her. I assuming you mean that you fell foul to paying a deposit then when you came to Spain their was no place to stay.
You say there was no record of the Booking! I find that hard to believe because there will be an audit trail of either money transfers from your account to hers, Emails confirming the Booking (or other such visual proof). This is sufficient to prove a fraud which in fact takes place where the person is based, not where it happens. In this case it will be the UK as this is where the scammer lives.
Irrespective of what 'stories' the offenders gives as an alibi. The onus is on her to prove those stories. If there are others who have been scammed by her it will only take a press release by the Police to encourage others to come forward.
Catching her out in her lies is the easy part, getting justice and compensation for what you and countless others have paid out will be the hard part.
Warning others of her scam on this site isn't really going to do much in bringing her to justice because you are speaking to those who either live in Spain or already have holiday Villas for their own use, and in some cases rent them out (hopefully legitiamally)!
