I have a holiday home in Spain and own a Spanish registered car which I leave at the airport for when I am there. I can drive this with my UK license. I insure it in Spain.

My ins company here Liberty Seugros has told me that you cannot drive a UK on a Spanish licence unless hired by you in UK by a reputable company and vice versa , she says anyone telling you, you can is commenting fraud and if you get stopped you will be prosecuted so just make sure

I am not sure about driving a UK car on a Spanish license but I am not doing that. I am just saying I own and drive a Spanish registered car on my UK license.

I have a Spanish registered car and a UK driving licence, the car is insured in Spain. Like Pedro I am non-resident, it is legal for me to drive the car in Spain.
Read the article below from the N332 website that clarifies what the situation is with driving foreign registered cars in Spain on a Spanish licence.

Have a look at the N332 website as it deals with anything to do with driving in Spain. The website, and their Facebook page, is for English speaking people and is run in collaboration with officers of the Guardia Civil. The website has an English version of the Spanish equivalent of the Highway Code on it.

Umbrella parking have covered parking by Alicante airport which is worth doing if the paintwork is in good condition We use them and are really happy with them ( around 200 euros more than not under cover)

I did this some years ago
In the end it cost me in the region of £7000
Headlights had to be changed.
Vehicle had to be re registered.
I paid a third party to deal with this part.
I think I also had to pay tax on the vehicle
I would not do it again and have since scrapped the old girl.
Bureaucracy. In Spain is horrendous. To be avoided at all costs.
Good luck.
