Please does anyone know if,  applying especially to Manchester,  for a Visa your passport is held and for how long. I am told Manchester are quite adept at processing and wondered how long they would keep it as my daughter is applying but also needs to come often to help me medically therefor she cannot be without her passport for too long. 

Also my daughter is under pensionable age and has to get health insurance cover, can anyone speak of their experience on this issue.

Hi,

As your daughter is an adult she will need to apply for the non lucrative visa (unless she intends on working) 

For the non lucrative visa your daughter will need to prove that she has a provable income of €28,800 per annum and private healthcare paid for a full year. 

I understand that the Manchester Consulate will keep her passport until completion of the application.

All health insurance policies must cover a full 12 months with no co-payments and you will have to meet the cost of prescriptions in full. Once officially resident in Spain for a continuous period of 12 months you may apply to join the Convenio Especial which will give you access to the same public health care as Spanish nationals. Once again, the cost of prescriptions must be met in full. The cost of the Convenio is €60 if under age 65 and €157 If 65 and over per month.
