Who am I to tell you what is the best route for you?
I recommend that you try Google maps and viamichelin where you can choose the options that you want. They will also give times and distance which should assist you with your decision making

Thanks it’s my first time driving to Spain.
Those two sites are as good as you get to help you plan the route.
You don't say whether you have driven in France before, if you have then Spain isn't much different.
If you want advice on specific parts of your route then there are plenty who can help, but not me, I don't use tj the SE of UK crossings

I would recommend that you use Via Michelin, it provides a detailed route including service stations and where and how much the tolls are. We used it a couple of years ago when driving from Cherbourg to La Zenia. The motorways are quieter than ordinary roads so easier driving and most service stations have a park area that was great to let our dog out of the car. Split the journey up with overnight stops in low cost Hotels along the route, we pre-booked ours as we needed to make sure they were pet friendly.

Through France you will have to use the motorways (toll) straight to Hendaye/Irun. From there to your final destination there are 2 possibilities: a. Pamplona-Zaragoza-Teruel-Valencia or b. via Madrid. Both routes include mountain passes and toll motorways. I'd recommend the Madrid route which is easy and, except for a short leg, without toll. I made it in 9 hours from Bordeaux to Murcia without speeding (120 kmh limit).

I go route A everytime. I do it in one go with no hotel stop takes approximately 21 hrs
