That's strange, we have received birthday cards from UK plus we get our water and electricity bills plus the Consume magazine I signed up for. Where do your utility bills get sent.

I thing it is best to register with both the water and electric companies websites to use their Virtual Offices, you can then go paperless for your bills and monitor your usage and bills whether you are in Spain or back in the U.K.

We live miles out in the campo - the idea of Correos delivering here is risible. We have an Apartado de Correos in our nearest small town - there is no post office in our village. This is not a problem and is common practice in these areas. There are also a Buzon which we have purchased rights to from the local Ajuntamiento, but most things go to the Apartado.
The only difficulty is that anything ‘official’ from a Govt dept in Spain will not be sent to the Apartado and does require some tracking down.. But all utilities send notifications of bills via email and one simply uses their websites.
