If I become an Irish citizen and get an Irish passport I have the option of being in Spain for more than 90 days on holiday albeit signing to say so.  

I don't want to be resident so therefore never an expat.  The website is for expats.

The "signing to say so" is applying for Residency and all that entails.
As you say in the past many Brits took advantage of the fact that Spain did nothing about EU overstayers and I'm sure there are still Irish and other EU nationals who stay here longer than the 90 days without registering but can just leave the EU for a day to restart the 90 days. Some don't even bother doing this.
When all the new passport trackers are up and running later this year then everybody's movements will be known but what Spain do, if anything, is unknown. I guess that as long as they are not becoming a burden on the state, Spain won't care.

Yes but as there are no internal borders within schengen. You could say you arrived yesterday !

Never mind. 2 x 3 months is better than zero!!

Having an Irish (EU) passport makes it easier to gain residency in Spain and also allows the non EU (UK) partner to apply for residency under less stringent conditions than under the NLV. The income requirements are a lot lower but private healthcare is still required for the first year.

Good luck with the application for the Irish passport.

....and providing you never want to leave Spain you could arrive on a tourist visa as a UK passport owner and never go back.

Yes passport is stamped on entry and exit and every chance you have to enter and exit via France.  But having bought a 6 month visa for France and no internal borders I doubt if anyone is interested in little old me and where I go!!!

Yes but I wouldn't stay as wouldn't want to be illegal and don't want to be resident either..  just more than 3 months and less than 6.

Now that is a really unhelpful piece of advice.....

You wouldn't get work, you wouldn't get healthcare or get an apartment to live in.

You will also be an illegal immigrant!!
