It's now eight months since I started this thread with my original post. Quite a lot has happened in the meantime!
We got our NIEs in the Spanish consulate in London before we moved out here.
I opened a bank account with Sabadell in february on a scouting trip. There was a monthly fee of 10 euros, but since I have acquired my residencia, I have changed to an 'Expansion' account which has no fees as long as you pay in 700 euros/ month. I would recommend BBVA bank, my partner has an account with them, they have no fees or other restrictions from the word go.
Bought a house with legal representation from Asociados Tecnicos of Denia in May, they are not the cheapest but they are ultra professional and attend to everything including transferring utitities. You need to budget for total taxes and buying costs of 15% on top of house purchase price.
Obtaining residencia was a piece of cake, did it myself, just make sure all paperwork is in order, including health insurance if required. Ditto signing up with Padron.
