In principle, probably, yes. In order to work legally in Spain, even only amongst the ex pat community, you would need to comply with Spanish regulations; the local social services would be able to advise you, You will also need to register as autonomo, self employed, which will mean that you have to make contributions monthly, although there are reductions for the first 6 months or so. You will need a test or to deal with your taxes .
You would be unlikely to obtain an employment contract , unless you speak fluent Spanish and are compliant with requirements here. There are agencies which do mainly cater to the expat population, but I understand that they do not ‘employ’ carers, effectively they subcontract to fully registered self employed.
