Purchased a 1973 Spanish finca/casa.  Requires completely new electricity and rewiring. 
Do insurance policies require a copy of the electricity companies installation and rewiring inspection reports?
My electricity supplier is Iberdrola.

Do insurance household policies in Spain also require a copy of water and gas installations, and any renovation installations (new roof)?
Any advice is warmly welcome.

An (any) insurance company can set up their conditions of contract as they feel and youn are free to accept them or not.

What may be required is the Cédula, the Certificate of Habitation, provided on first occupation of the property after construction by the Ajuntamiento, basically ensuring that the property complies with local rules etc. Without this Iberdrola would not connect the power nor would the water company supply water.
