There are several situations where you could pay tax in 2 countries - Kimmy has explained one. Certain pensions are also taxable in the UK even if resident in Spain.
As a non-resident in Spain you pay Non-residents tax (a relatively nominal amount) but if you rent out your Spanish property then you also pay tax on the rental income in Spain every quarter. That income is also declared, along with the tax already paid in Spain, on your annual UK tax return.
