Because your not transiting through the airport. You are a actually leaving the airport for over 24 hours.
You must also do...
From 7th December a PCR test or Lateral flow test 48 hours before your flight back to the UK.
Also book your day 2 test to get a reference number for the locator form.
Also you have to isolate until the test comes back negative.
I've just filled my locator form in today. Hope this helps.

I’m flying home on Saturday and have booked our tests fir Thursday afternoon at FAVAN CLINIC. Park of nations area. Also €29

Google and ‘phone.
