A paella needs arround an hour to be ready, it doesnt have any meat to slow cook

R u for real ! A proper paella needs 24 hours prep and to say no meat you must be having a moment !! Words of head come to mind but won't put the beginning

Well, I work on my 20's in 5 different spanish restaurants, my mother made paella for 50 years, i went to lunch with my son's football team sometimes where the coach makes lovely paellas, I saw make gigantic paellas and they never took more than an hour to make it.

The meat just need to be "sofrito" that needs 10 minuts before you add water an rice.

Joke: Ahhhh, maybe you mean to go to the shop,buy the chicken and cut it.

The top Spanish eaterys in spain require 24 hours notice for a paella ! Google it

I dont know where you mean with "top Spanish eaterys", maybe you can send a link please. I promise I am looking for on Google and I am finding a lot or recipes that takes less than 90 minutes.

For example La Fallera is the bigger seller of rice in Valencia (i think also in Spain) on they website the posted a lot of ricipes with rice and all but one take less than 90 minutes:  https://www.lafallera.es/recetas/, maybe they dont know how to cook their product.

I give up.... lets say "we agree that we disagree" about how long time needs to make a paella

The initial thread of this conversation was asking for restaraunts that do good paella, not the history of and how long a paella dish takes to make? I’m not interested in any of the former, but do love paella - so any recommendations on restaurants where this can be found is greatly appreciated - especially in the Orihuela region!
