Also, authentically, it is never eaten in the evening, only lunchtime.
There are other rice dishes - cooked with black squid ink for example, but they are rarely called ‘paella’ as that is the name of the dish in which the rice is cooked - mainly depends upon the restaurant. It shouldn’t be hugely expensive, but avoid cheap restaurants and it won’t be ‘cheap’.
A proper paella needs to be ordered 24 hrs in advance
